That&#8217;s what&#8217;s cooking tonight as we grab a Bite with Belkys.<\/p>\n\n\n\n<p>The Chef: Justin Garriga<br>The Restaurant: Rosemary&#8217;s, Miami<br>The Dish: Mushroom Cavatelli<\/p>\n\n\n\n<p><strong>Ingredients:<br><\/strong>120g Cavatelli pasta (cooked according to package directions, reserve 1 cup of pasta water)<br>10g extra virgin olive oil<br>80g Mushroom Mix (Cremini, Oyster, Maitake)<br>10g Garlic in oil<br>2oz White wine<br>3oz Porcini Sugo<br>1g Parsley, chopped<br>20g 50\/50 Cheese Mix (parmesan and pecorino)<br>Salt\/Pepper to taste<\/p>\n\n\n\n<p><strong>Simple porcini sugo:<br><\/strong>2 cups beef broth<br>\u00be pound procini mushrooms, diced<br>\u00bd cup chopped green onions<br>\u00bd cup butter, cut into pieces<br>\u00bc cup all-purpose flour, or more as needed<\/p>\n\n\n\n<p><strong>Method of Preparation:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In a large skillet\/saut\u00e9 pan, heat olive oil and saute mushrooms over medium high heat, until they release water and begin to caramelize. <\/li>\n\n\n\n<li>Add salt, remove pan from heat, add white wine, and return to heat and add pepper.<\/li>\n\n\n\n<li>Continue to cook until wine has completely evaporated. <\/li>\n\n\n\n<li>Add porcini sugo, cooked pasta, and cheese mix and toss.<\/li>\n\n\n\n<li>Plate and garnish with parsley.<\/li>\n<\/ul>\n\n\n\n<p><strong>Porcini sugo:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Whisk broth, mushrooms, green onions, butter, and flour together in a medium saucepan over medium heat.<\/li>\n\n\n\n<li>Bring to a boil, then cook, stirring constantly, until golden brown and thickened, 5 to 10 minutes.<\/li>\n<\/ul>\n\n\n\n<p><strong>Rosemary&#8217;s<br><\/strong>322 NW 25th St.<br>Miami, FL 33127<br>305-486-2424<br><a href=\"http:\/\/www.rosemarysnyc.com\" data-type=\"link\" data-id=\"www.rosemarysnyc.com\" target=\"_blank\" rel=\"noreferrer noopener\">rosemarysnyc.com<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>If you love mushrooms, take a bite out of a simple pasta dish that&#8217;s perfect for fall.
